Gave pickling a go to see how it goes, I’ll report back later to let you know how it went!
Needed only one red onion for the 500mL jar, had plenty of diluted white vinegar on hand.
Chopped it up, blanched for 10 seconds, then dropped it into the jar with the vinegar, a teaspoon of salt and a teaspoon of sugar!
Gave it a stir, then into the fridge!
